I don't take a whole lot of time to cook, but I typically make a large portion of something on Sundays to last me 4 days of lunches at work during the week (I buy my lunch with co-workers on Fridays).

Just put this in the oven... looks good & smells good, so hoping it tastes good

It is basically fajita mix but I will be serving it over brown rice instead of in tortillas.
